Holiday Cheese Puffs

Holiday Cheese Puffs
Makes about 70 puffs

A great way to break your New Year’s resolution before it starts. These puffs are not healthy, but that’s why I love them. My mom always serves them while we decorate the Christmas tree – well, while my sister decorates the tree since I get too distracted by these delicious treats to be much help.

1 cup of mayonnaise, not light or low-fat
1 ½ cups of freshly grated parmesan cheese
1/3 cup of finely chopped white or yellow onion
1 loaf of thin cut sliced white bread
In a mixing bowl, mix together the mayonnaise, cheese, and onion.

Cut the crusts off the bread and cut each slice into fourths.

Spoon a little dollop of the cheese mixture onto each square and place them
on a cookie sheet.

Cook under the broiler (on the highest setting) for about 5 minutes, or until
the puffs are browning and bubbly.
