The One-Pot Stop: Blueberries, Beyond Muffins and Pie

Summer is the one season when it’s truly difficult to find anything to complain about. If you’re from a state where actual seasons exist, you know that the all-too-welcome summer months are here when it’s warm enough to leave your jacket at home, and the produce is sure to be fresh.

Every year, my mother and I go to the local blueberry farm to pick our own berries. We always end up with far too many to eat before they go so about half of them end up in our freezer.

As delicious as they are on their own, what else can you do with blueberries besides simple pop ‘em in your moth?

There are some obvious answers: blueberry muffins, cobbler, pie. All baked goods, which are great once in a while, but during the summer most people prefer lighter, more refreshing fare. Instead of blending them into a fruit smoothie of some kind, why not get a little more creative and make a sweet and fresh summer salad?

You may recognize this salad: it’s a classic, but the blueberries add a nice twist to the original. I’m talking about watermelon, feta, and mint salad. This time, however, let’s throw in some blueberries!

I personally love this salad in its simplest form: just melon, berries, cheese, and herbs. There are some, though, who enjoy a light dressing to add another layer or two of flavor. You might want to try it both ways, so you can decide for yourself. Again, a mere suggestion.

Whichever route you choose to take, this meal will not disappoint in the hottest weeks of July and August. It’s simple enough to eat any day of the week, and elegant enough to serve at a summer get-together.

**Recipe**

Minted Blueberry, Watermelon, and Feta Salad
Serves 8

Ingredients
4 cups watermelon, cubed
2 cups blueberries, washed
1 cup cucumber, diced
1 cup feta, cubed or crumbled
1 bunch fresh mint, chopped

Honey Lemon/Lime Dressing (Optional)
4 tablespoons lemon or lime juice
2 tablespoons honey

In a large salad bowl, lightly toss together the watermelon, blueberries, and cucumber.

If you are opting to add the dressing, whisk together the lemon or lime juice and honey in a smaller bowl until thoroughly combined and pour over the top of the fruit and cucumber. Lightly toss once more.

Lastly, sprinkle the feta and mint over the top of the salad, distributing both as evenly as possible.

For parties, add some extra pizazz by serving in a hollowed-out watermelon half.
