We could all learn a thing or two from hummus. It is so unassuming, a humble yet loyal presence at the salad bar with its creamy beige appearance. Yet, when you pair it with cucumbers or spread it on pita, it astounds you with its burst of delicious and richly complex flavor, enabling you to better savor and appreciate the delicate flavors in both the cucumber and the pita. Before we get too philosophical, let’s get back to the food: hummus deserves some TLC. You can easily dress it up with a few simple ingredients found in the cafeteria, transforming its humble facade into something elegant and dare we say it…a little fancy.

Basil Hummus with Cucumbers
1 tablespoon chopped cucumbers
1 tablespoon white beans
2 teaspoons chopped red onion
salad greens for garnish
dash of black pepper
Top the hummus with the oil. Take a moment to admire how it seeps artistically into the organic grooves of the lovely hummus. Garnish with chopped cucumbers, white beans, red onion, and salad greens. Add some black pepper. Spread on cucumber slices or crackers and enjoy!
