Eat Under $10: Four Cheese Ravioli With Shrimp and Vegetable Stir-fry

Shopping List: 1 package four cheese ravioli ($4.00); 1/5 package frozen shrimps ($4.00); ½ package of white mushrooms ($1.00); 1 green pepper ($1.00); ¼ sweet onion ($0.25); 1 head broccoli ($1.00); 1/10 block of cheddar cheese ($0.50); 2 tablespoons olive oil ($0.25)

Total cost: $12.00 for 2 people or $6.00 for 1 person

Cheap, quick, easy and healthy…not much more you can ask for in a meal. I never knew making ravioli was so easy until I pulled a package out of my freezer a few weeks ago and realized it’s just as easy as cooking boxed spaghetti. With a bit of olive oil, salt and pepper, and topped with some grated cheese, you’re halfway to a complete meal in 5 minutes (and under $3.00). Frozen shrimp is also a great go-to stir-fry ingredient. It’s healthy and easily prepared: just run them under hot water for a few minutes, pull off their tails and pop them in a frying pan. Chop and dice some stir-fry appropriate vegetables and add them to the pan, and you’ve got a great dinner …possibly while watching Gossip Girl or Grey’s Anatomy.

Four Cheese Ravioli with Shrimp and Veggie Stir Fry
Serves 2

1 package Four Cheese Ravioli
1-2 tablespoons olive oil
Salt and pepper to taste
1-2 tablespoons grated cheddar cheese
10 frozen shrimps
½ package sliced white mushrooms
1 diced green pepper, chopped
¼ thinly sliced sweet onion
1 chopped head of broccoli
1-2 tablespoons olive oil
Salt and pepper

Bring 3 quarts of water to a boil. Add ravioli and let boil for 4-6 minutes. Drain carefully.

Add olive oil and salt and pepper. Top with grated cheese and serve alongside your stir fry.

Meanwhile, soak shrimp in hot water for 3-4 minutes to thaw. Once thawed, remove tails. On medium, heat vegetables, shrimp, and olive oil in a frying pan, stirring frequently for approximately 10 minutes. Once broccoli is cooked through, the stir-fry is ready.

Add salt and pepper to taste. Serve hot.
